Venue Manager – Brunetti Oro 1956 - Chadstone

We are currently looking for a Venue Manager to join the Brunetti Oro Management Team, to assist with the leadership and management of our new Chadstone store.

The primary purpose of the Venue Manager is to ensure the Chadstone store operates effectively, profitably and successfully, and maintains a work culture based on professionalism, passion, and respect. A culture focused on providing exceptional quality and customer service, maintaining the Brunetti Oro 1956 reputation, ethos and heritage.

The Venue Manager coordinates operational tasks across all departments, ensuring the highest standard of products and services, and provides leadership to the Chadstone Team, leading by example to ensure consistent delivery of the ‘Brunetti Oro Experience’.

Skills and Experience Required

To be successful in this role you will be able to demonstrate:

  • Effective leadership demonstrated through previous experience of managing large, diverse, successful teams. 
  • At least 2 years’ experience of hospitality industry management.
  • The ability to embed and maintain a respectful, professional, productive, and fun work culture that promotes loyalty and staff retention. 
  • A track record of successful financial management and business growth demonstrated through experience with budgeting, effective cost rostering, stock control and revenue growth 
  • Excellent customer service skills ideally finessed in premium café and/or restaurant operations
  • Excellent interpersonal skills with the ability to build and maintain productive working relationships and teams, providing coaching and mentorship as required
  • Attention to detail and organisational skills
  • Energy, enthusiasm, and a passion for excellence
  • Permanent residency or ability to work in Australia
  • Flexibility and availability to work a mix of weekdays, weekends, public holidays

We are always on the look-out to connect with experienced, passionate, proactive kitchenhand's to join our friendly, dedicated, team. 

The kitchenhands primary purpose is to assist the kitchen team with the preparation of all food products at the venue. 

The kitchenhand will also assist with clearing and maintaining the kitchen department, equipment and utensils, ensuring Brunetti standards are met.

Skills and Experience Required

To be successful in this role you will be able to demonstrate:

  • Maintain set preparation procedures and recipes;
  • Work efficiently and satisfy production schedules
  • Ensure that the food served reflects flair, creativity and the quality that Brunetti is known for and
    that product consistency is attained in regard to appearance and taste;
  • Following directives as set by senior kitchen staff to ensure high and consistent standards;
  • Transfer, weigh and check supplies and equipment;
  • Participation in regular training and development sessions;
  • Clean and maintain the kitchen department, equipment and utensils to the appropriate standard
    within allotted timeframe;
  • Wash dishes, pots and pans and utensils in a timely manner without effecting quality and standards
  • Sort and remove rubbish, placing it in designated pick up areas;
  • Follow sanitation procedures and complete cleaning schedules within the allotted timeframe and to
    the appropriate standard;
  • Ensure an exceptional and consistent level of service in a clean and professional environment;
  • Comply with and understand Brunetti Policies and Procedures.

This is a full time position

A minimum of 2 years experience in a similar role is required for the Commis Chef position as is a formal qualification in pastry and experience working within a pastry/cakes production kitchen environment.

A minimum of 3 years experience in a similar role is required for the Demi Chef position as is a formal qualification in pastry and experience working within a pastry/cakes production kitchen environment.

A minimum of 4 years experience in a similar role is required for the Chef De Partie position as is a formal qualification in pastry and experience working within a pastry/cakes production kitchen environment.

Skills and Experience Required

The right candidates will demonstrate product knowledge as well as culinary function with special emphasis on consistency, quality, presentation, and authenticity.

  • Demonstrating knowledge and confidence in production of various pastries, danishes, croissants, focaccia bread, cakes, novelties filling, wedding cakes, Italian pastries.
  • Demonstrating the necessary skills to finish and decorate cakes using various techniques like hand masking, glazing, spraying, novelties, and wedding cakes as required.
  • Providing functional assistance in the production team demonstrating superior standards of preparation, production and finishing within your specialized field
  • Implementing superior standards of preparation and production within the department demonstrating and utilizing your pastry skills, experience and knowledge gained from previous roles and qualifications
  • Contribute to the fulfillment of production schedules and targets, ensuring all products are prepared to the Brunetti Oro standard, demonstrating organizational skills and superior attention to detail
